What to Eat After a Workout: One-Pan Roasted Sweet Potato, Chicken & Veggies

One-Pan Roasted Sweet Potatoes, Chicken and Veggies


Prep Time: 10 mins.

Cook Time: 35-40 mins.

Total Time: 45-50 mins.


Ingredients

  • 1 chicken breast, skinless

  • 2 cups chopped broccoli, carrots and cauliflower, mixed

  • 2 sweet potatoes, cleaned, with skin, cubed

  • olive oil, drizzle

  • salt and pepper to taste

  • 1 tsp. paprika

  • 1 tbsp. Mrs. Dash Salt-Free Chicken Seasoning Blend

  • cooking spray

Directions

  1. Pre-heat oven to 400 degrees F (200 degrees C).

  2. Cover a 9 x 13" baking pan with aluminum foil and mist with cooking spray.

  3. Take 2 cups chopped sweet potatoes and pour onto one third of the pan (as shown in the video).

  4. Place cleaned, skinless chicken breast in the middle of the pan.

  5. Take 2 cups mixed broccoli, cauliflower and carrots and pour onto the last third of the pan.

  6. Sprinkle paprika and Mrs. Dash chicken seasoning blend onto chicken breast and sprinkle salt, pepper, and olive oil onto sweet potatoes and mixed veggies and rub vigorously to cover completely.

  7. Place in oven for 35-40 minutes or until golden brown.

  8. Cut chicken in half and serve on a plate along with half of mixed veggies and sweet potatoes.

  9. Enjoy!
