Healthy Chocolate Protein Peanut Butter Cups


Hey Team! In celebration of the wonderful turnout of last week's post (Anxiety & Depression: How to Use Food to Manage Stress), we have decided to share recipes brought to you by our partners in nutrition, dotFit that help you look forward to your de-stress time without expanding your waistline. The ingredients that are included in these recipes are easy to make and all contribute to your healthy fats, proteins and essential nutrients your body needs daily without the additional fillers, but we warn you; Try not to have more than 2 at a time!



Recipe


Ingredients

  • 1/3 Cup Smooth PB Butter

  • 1 Scoop dotFIT Vanilla WheySmooth

  • 1 1/12 Cups Dark Chocolate Chips

  • 1 Tbsp. Coconut Oil

  • 1 Tbsp. Honey

Directions 1. Place muffin liners in a muffin tin, set aside. 2. In a small bowl, mix together protein powder, PB and honey until smooth. 3. Place Chocolate chips and coconut oil in a microwave-safe bowl, microwave in 30 sec. increments and mix in between until fully melted. 4. Place 1 tbsp. of melted chocolate into each muffin lined well. 5. Place 2 tsp of PB/protein mixture into melted chocolate in muffin lined well. 6. Add an additional 1 tbsp. of chocolate on top of the PB/protein mixture. 7. Chill until firm. 8. Store in refrigerator until ready to serve.


Additional Tips


When enjoying this recipe, take the time to close your eyes and savor every bite slowly, using your chewing as a way to be grateful and give thanks for this wonderful time to de-stress and reward yourself for an adulting well-done! Be proud that you have this time to reflect on the day and that you are actively taking steps to build healthy habits in overcoming silent battles. Take deep breaths in between bites and visualize everything positive that has happened in the day (big or small) as you enjoy your meals.
